Position Summary: The Retail Manager is responsible for the end-to-end management of a retail butcher shop, including operational planning, staff supervision, inventory and supplier management, financial performance, and regulatory compliance. This role requires independent decision-making to ensure the business operates efficiently, meets food safety standards, and achieves sales and profitability targets.
Detailed Duties and Responsibilities:
1. Store Operations Management
a. Direct, control and coordinate all daily operations of the butcher retail shop
b. Ensure smooth workflow across meat preparation, display, and customer service areas
c. Monitor store presentation, cleanliness, and merchandising of fresh meat products
d. Establish opening/closing procedures and operational standards
2. Product & Inventory Management
a. Determine product range including beef, lamb, pork, poultry, and value-added products (e.g. marinated meats)
b. Monitor stock levels of fresh meat and ensure proper stock rotation (FIFO)
c. Coordinate ordering with suppliers and wholesalers
d. Minimise waste and shrinkage, particularly for perishable goods
e. Oversee storage conditions including refrigeration and temperature control
3. Supplier & Procurement Management
a. Liaise with meat suppliers and negotiate pricing and supply terms
b. Evaluate supplier performance and ensure consistent product quality
c. Plan purchasing schedules based on sales trends and seasonal demand
4. Financial Management & Business Planning
a. Prepare and manage budgets, cost control, and pricing strategies
b. Set retail pricing to maintain profit margins while remaining competitive
c. Monitor daily and weekly sales performance
d. Analyse financial reports and adjust operations to improve profitability
5. Staff Management & Leadership
a. Recruit, train, and supervise retail and butcher staff
b. Prepare staff rosters
c. Provide ongoing training on customer service and food handling
d. Conduct performance reviews and manage workplace issues
6. Compliance & Food Safety
a. Ensure compliance with Australian food safety standards and local regulations
b. Maintain hygiene standards across meat handling and preparation areas
c. Implement and monitor food safety programs (e.g. temperature logs, sanitation)
d. Ensure workplace health and safety (WHS)
e. Handle escalated customer complaints and feedback and build relationships with regular customers and local community
7. Reporting & Strategic Planning
a. Analyse sales data and customer trends
b. Prepare operational and financial reports for business owners
c. Identify opportunities to expand product offerings or improve efficiency
d. Contribute to long-term business growth strategies.
8. Required Skills & Experience
a. Minimum 1 year experience in retail management (butcher/meat retail highly preferred)
b. Strong understanding of fresh food retail operations
c. Proven ability to manage staff, inventory, and financial performance
d. Knowledge of food safety and hygiene standards
e. Strong leadership, organisational, and problem-solving skills.
