Job Description

SANJH CAPITAL PTY LTD The Cook will be responsible for preparing, seasoning and cooking a variety of authentic Indian dishes in a commercial kitchen environment, ensuring that all meals are produced to a high standard of quality, consistency and presentation. This includes preparing ingredients such as meats, vegetables, spices and sauces, and cooking menu items including curries, tandoori dishes, rice preparations, breads and appetisers using appropriate cooking methods such as grilling, frying, roasting, steaming and tandoor cooking.

The Cook will regulate the temperatures of ovens, grills, burners and tandoor equipment to ensure food is cooked correctly and efficiently. The role requires examining foodstuffs and ingredients to ensure freshness and quality, and monitoring food at all stages of preparation and cooking to maintain consistency in taste, texture and presentation. The Cook will portion and plate food appropriately, adding garnishes, sauces and accompaniments in accordance with the restaurant’s standards, while ensuring all dishes meet customer expectations and service requirements.

The Cook will be responsible for maintaining a clean and organised kitchen, ensuring all food preparation and cooking areas comply with food safety, hygiene and sanitation regulations. This includes storing food in temperature-controlled facilities, following proper handling procedures to prevent contamination, and maintaining high standards of cleanliness across all kitchen equipment and workspaces. In addition, the Cook will assist with kitchen operations by working collaboratively with other staff to ensure smooth and timely service, particularly during busy periods.

The role includes assisting with stock control by checking deliveries, storing supplies correctly, monitoring stock levels, and ensuring proper stock rotation to minimise wastage. The cook may also support menu planning by contributing ideas for dishes and estimating food requirements, while assisting and guiding junior kitchen staff where required. Benefits

The role requires examining raw ingredients and foodstuffs to ensure freshness and quality, and monitoring food throughout all stages of preparation and cooking to maintain consistency in taste, texture, and presentation. The cook will portion and plate dishes appropriately, applying garnishes, sauces and accompaniments in line with established presentation standards while ensuring timely service during busy periods. The Cook will maintain a clean, organised and hygienic kitchen at all times, ensuring compliance with food safety, hygiene and sanitation regulations.

This includes proper handling, storage and labelling of food in temperature-controlled environments, preventing contamination and ensuring all kitchen equipment and work areas are kept to a high standard of cleanliness. In addition, the Cook will support kitchen operations by working collaboratively with other kitchen staff to ensure smooth workflow and efficient service. Responsibilities include assisting with receiving deliveries, checking and storing food supplies, monitoring stock levels, and ensuring proper stock rotation to minimise wastage.

The Cook may also assist with basic menu preparation, estimating food requirements, and supporting or guiding junior kitchen staff where required, while following all workplace health and safety procedures. Qualification & experience The successful candidate will hold a relevant qualification equivalent to an Australian Certificate III in Commercial Cookery or higher.

In the absence of a formal qualification, a minimum of three years of full-time relevant work experience as a Cook in a commercial kitchen environment will be considered. The applicant must demonstrate proven experience in preparing and cooking a variety of dishes in a busy restaurant setting, with preference given to candidates experienced in Indian cuisine , including curries, tandoori items, and traditional cooking techniques. A sound understanding of food preparation methods, cooking techniques, and kitchen operations is essential.

The candidate should possess strong knowledge of food safety, hygiene, and sanitation standards , along with the ability to work efficiently in a fast-paced environment while maintaining consistency and quality. Good communication skills, the ability to work as part of a team, and a strong work ethic are required.
